Holiday Recipe Contest Winner (2009):
Pumpkin Gingerbread Trifle by Benoit Pascal
Pumpkin Gingerbread Trifle Recipe
- 2 packages of gingerbread mix (or you can make it by hand)
- 1 box cook-and-serve vanilla pudding mix (or instant)
- 1 (30oz) can pumpkin pie filling
- 1/2 cup packed brown sugar
- 1/3 teaspoon ground cardamon or… cinnamon or cloves…
- 1 or 2 containers of Coolwhip
Directions
- Bake the gingerbread according to the package directions; cool completely. I usually just bake it in a big sheet.
- Make the pudding and set aside to cool.
- Stir the pumpkin pie filling, sugar, and cardamom into the pudding.
- Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl/punchbowl/upsidedown cake stand. Pour some of the pudding/pumpkin mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding/pumpkin, and coolwhip.
- Sprinkle of the top with crushed gingerbread, if you want.
